Bring the Taste of Michigan to Your Superbowl Party
Apple Blue-Cheese Chicken Rollups (ABC Bites)
6 boneless, skinless, chicken breasts
½ cup Mayonnaise
¼ cup Honey-Mustard
1 tablespoon cilantro, dried
3 cups Michigan Apples - julienne cut
1 teaspoon lemon juice
Romaine lettuce or Broccoli-Slaw
5 ounces Blue-Cheese, crumbled
4 ounces of Mozzarella cheese, shredded
6 Flatout flatbread - (there are many varieties)
Clear plastic wrap
Rub: Mix 1 teaspoon garlic powder, ½ teaspoon onion powder, 1 teaspoon basil, 1 tablespoon parmesan cheese, 2 tablespoons finely minced sun dried tomatoes.
Place chicken breasts in plastic bag - cover the breasts with the rub. Refrigerate overnight.
Preheat oven to 350 degrees. Bake chicken breasts for 1 hour - place chicken in fridge for at least 2 hours. Take out and thinly slice chicken.
Mix, Mayonnaise, mustard and cilantro in bowl, for spread.
Slice and toss Michigan apples in lemon juice.
Place Flatbread on 12 inch sheet of plastic wrap.
Spread mayonnaise mixture on the Flatbread, sprinkle blue cheese, layout chicken slices, Mozzarella cheese, apples and lettuce on to the Flatbread.
Roll tightly then wrap in plastic wrap and refrigerate at 2 hours or overnight.
Do the above again with the remaining Flatbreads and other ingredients.
*Additional options: bacon, or substitute shredded cheddar cheese for the blue cheese.
